Low Calorie Eggplant Spread

Ingredients
1 Eggplant, peeled, sliced 1/4 inch thickI lemon wedge (or 2 tsp of lemon juice)1 tsp of salt1 tsp of black pepper3 cloves of garlic
Directions
Broil eggplant slices in the broiler for 10 minutes on each side.

wrap the 3 garlic cloves with their peels in aluminum foil and toast for 2 mintues. Remove from aluminum foil and peel them.

mix together the broiled eggplant, toasted garlic cloves, salt, pepper and lemon juice in a large bowl and hand mix until smooth or in a blender for 30 seconds.

Serve cold or warm and enjoy! Great on sandwiches loaded with other vegetables or as a base for pasta salads!
