Baked Stuffed Potatoes

Ingredients
8 medium baking potatoes1/2 to 3/4 cup milk, scalded1/4 cup butter1 egg1 cup Cheddar cheese, grated2 green onions, sliced1 1/2 tsp salt1/4 tsp pepper
Directions
Scrub, dry and pierce potatoes. Bake at 400 degrees for 1 hour. Cut slice from tops of potatoes (not from ends); scoop out potatoes leaving skins intact. Mash potatoes an add remaining ingredients. Put back into skins. Wrap in foil, keeping top of foil away from potatoes. (Note: Can freeze for later use at this point.) Bake at 350 degrees for 1/2 hour (or more if potatoes are cold). Unwrap and serve. Serves 8.
