Thumb Sauce Pasta

Ingredients
2 tbsp. Oregano2 cloves Garlic - minced or through a garlic press2 tbsp extra virgin olive oil2 boneless skinless chicken breasts2 cups mushrooms - sliced1 medium yellow onion - diced1 14 oz can whole stewed tomatoes4 Tbsp parmesean cheese1 can chicken broth
Directions
Dice chicken breasts and sautee in olive oil until cooked, approximately 5 minutes. Remove chicken and set aside. Add diced mushrooms and onion along with garlic to pan and sautee until tender. Remove tomatoes from can and chop them finely. Add tomatoes and tomatoe juice from the can to the pan. Add back chicken. Add chicken broth and season with oregano, salt and pepper to taste.

After sauce is made, bring water to a boil and cook pasta. This allows the flavors of the ingredients in the sauce to fuse together.

Place serving of pasta on a plate and top with sauce. Make sure to add the 'juice' of the sauce, not just the food. Top with parmesean cheese.
