Mincemeat Sultana Muffins

10 oz plain flour2 tsp baking powder1/2 tsp bicarbonate of soda1/2 tsp salt3 oz caster sugar1 egg1 cup milk1 cup mincemeat3 fl oz vegetable oil3 oz sultanas
Prepare muffin tins. Heat oven to gas 5-6, (375-400 F / 190-200 C)
In a bowl sift all the dry ingredients (flour, baking powder, bicarbonate of soda, salt, sugar)
In a separate bowl (or large jug) beat egg with fork. Add milk, mincemeat and oil.
Pour into dry ingredients and stir until combined.
Add sultanas and finish mixing. Note that the mixture will be lumpy but this is fine as long as the flour is all mixed in.
Put into muffin tin and bake in the oven for 20-25 minutes.
