Rabbit Power Brownie Cupcakes

Cupcakes:1 1/4 c. sugar1 c. flour1/2 c. unsweetened cocoa powder1/2 tsp. baking soda1/2 tsp. baking powder1/4 tsp. salt1/2 c. baby carrots2/3 c. vegetable oil2 eggs1/4 c. milk1 tsp. vanilla extractFrosting:1 c. powdered sugar2 tbsp. butter4 oz. fat free cream cheese1 tsp. vanilla
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a large bowl. Beat with electric mixer at low speed until blended. Increase speed to meduim. Beat 2 minutes. Spoon into cupcake pan, filling about two-thirds full.
3. Bake 15 minutes.
Frosting:
1. Cream butter and cream cheese together with an electric blender.
2. Slowly blend in powdered sugar and vanilla.
Makes 10 cupcakes
