Squash Pancakes

Ingredients
1 Cup Pumpkin, pureed or mashed1 Cup whole grain flour2 Tbsp brown sugar1 tsp cinnamon1 tsp baking powder1 large egg, beatendash of salt1/4 Cup Liquid (kefir, buttermilk, milk any to your liking or consistency) [Recipe calculated w/kefir made w/1% milk]
Directions
Make as you usually would make pancakes, waiting for tops to bubble before turning.
Serve with butter and maple syrup (not figured in the calculation).

Note:To save on calories, I use whipped butter and pure maple syrup is healthier.

Serves 3 - 6 " pancakes.
