Healthy Chipotle Cucumber Rounds

Ingredients
2 cucumbers, sliced into 1/4 in. rounds1 container chipotle hummus6-8 radishes, sliced thinfresh cilantro (remember to pull leaves off of stems, as stems are often bitter)
Directions
1. Slice cucumbers into rounds, approx. 1/4 in. in thickness.
2. Slice radishes, very thin
3. Spread chipotle hummus onto cucumbers
4. Layer 1-2 radish slices on top of cucumber rounds
5. Sprinkle cucumber rounds with several leaves of cilantro

Makes 24-30 cucumber rounds
