Hash Brown Cheese Casserole

Ingredients
2- 12 oz. packages frozen hash brown potatoes, thawed (can use fresh potato shreds too2 cups fat free sour cream1 can 98% fat free cream of chicken soup1/2 cup light butter, melted or softened1 tsp. salt1 tbls. minced onion2 cups shredded cheddar cheese2 cups coarsely crushed corn flakes1/4 cup melted light butter
Directions
Place potatoes in collander. Let stand until completely thawed. Drain off excess moisture. Combine sour cream, soup and 1/2 cup butter and mix well. Add salt and minced onion. Blend in potatoes and cheese. Place mixture in a shallow 2-quart casserole dish sprayed with cooking spray. Combine corn flakes with 1/4 cup of butter and sprinkle over top of potatoes. Bake uncovered at 350 degrees for about 50 minutes, or until golden brown and bubbly.

    I've made this before. You can cut tons of calories and fat by cutting the butter in half and not using cornflakes or butter on top, it just gives a nice look and crunch to the top but not ness. Also can use reduced fat cheese. Great with ham or as a side dish to any meal. - 9/19/09

    What does the butter do for the soup and sour cream? Also usig reduced fat cheese would lower the fat lower. Sounds good will give it a try - 11/18/08
