Ingredients:Chicken Breast, no skin, 300 grams *Potato, raw, 325 gramsCelery, raw, 220 gramsLeeks, 200 gramsOnions, raw, 150 gramsBaby Carrots, raw, 150 gramsTomato Paste, 30 grams (2 tablespoons full)Garlic, 5 clovesKnorr Chicken stock cube, 2 cubes Saffron, 2 grams (a pinch)Pepper, black, 2 tspWater, tap, 40 fl oz (2 UK pints or 1.2 litres)
Cut everything up into pieces the size of your index finger first joint.
Put all ingredients, except stock cubes, into a big saucepan with a lid. Bring to the boil. Take off the heat. Crumble in the stock cubes. Bring back to the boil. Cover with the lid and simmer for 45 to 90 minutes.
Serves four big portions of only 223 calories.
