Quick Beef and Noodle Stir-Fry

2 (3 ounce) packages beef-flavored ramen noodles, broken in half1 lb sirloin steak, cut into thin strips1 Tbsp olive oil (or more as needed)2 medium carrots, thinly sliced2 stalks celery, thinly sliced1 (6 ounce) package frozen pea pods, thawed1/2 cup bean sprouts1 tsp ground ginger1/3 cup teriyaki sauce, or to taste1/2 tsp red pepper flakes (optional)
1. Cook noodles according to package directions, except drain the noodles and reserve the seasoning packets for later use.
2. Meanwhile, heat oil in a large skillet over medium-high heat. Add all vegetables except pea pods and stir-fry for about 3 minutes or until crisp-tender. Remove vegetables from skillet and keep warm.
3. Add steak strips to skillet and stir-fry for 3 minutes or until done. Return vegetables to the skillet. Stir in noodles, reserved seasoning packets, pea pods, teriyaki sauce, ginger and red pepper flakes. Continue to cook over medium heat, stirring occasionally until heated through.

Very yummy with lots of healthy veggies! I also added in this recipe water chestnuts, tiny corns,sweet red pepper,mushrooms. Instead of the high in sodium beef ramen noodles I used actual lo mein noodles. They were really quick and easy to do! Thanks for sharing this recipe! - 10/18/09
