Coffee-Crusted Beef Tenderloin

Ingredients
4 # Beef Tenderloin RoastGourmet Whole Coffee Beans, Finely Ground1/4 Cup Splenda Brown Sugar Blend2 TBSP Ea. Chili Powder, Paprika, Ground Sage1 TBSP Onion Powder1 TSP Cayenne Pepper
Directions
Preheat oven to 450 degrees. Trim fat and tough gray membrane from roast. Fold over thin end of tenderloin; using kitchen twine, tie roast - knotting every inch or so. Combine dry ingredients and rub half over roast. Let meat rest 15 minutes and then rub with remaining mixture. Place meat in roasting pan. Turn heat down to 400 degrees and roast without basting on center rack until meat thermometer reads 130 degrees for rare or 145 degrees for medium. Remove roast to cutting board and let rest for 10 minutes. Slice into 1/4" slices, serve immediately.

    It doesn't say how much coffee to use, and for us, that was a problem. We made it with pork tenderloin because beef tenderloin was not available. Honestly, this wasn't my favorite flavor - but I would try it again with less coffee and cayenne, on beef this time. - 7/31/11

    I halved the recipe, used ground coffee on tenderloin steaks, and pan fried them. OH my!! Loved it! I'd drop the splenda amount as i like heat over sweet, but great recipe! - 9/11/10
