Easy ginger bread bars

1 ¼ cups sugar1 ¼ cups softened butter1 egg3 tbsp molasses3 cups flour1 tsp. baking soda2 tsp. VE Pure Cinnamon2 tsp. VE Pure Ginger2 pieces finely chopped VE Crystallized Ginger1 tbsp. granulated sugar
Heat oven to 350 F. Combine first four ingredients in large mixer bowl. Beat at medium speed until creamy. Add next four ingredients, beat on low speed. Mix in VE Crystallized Ginger. Line 15x10x1 jelly roll pan with VE parchment Paper. Press in mixture until evenly distributed and flattened. Sprinkle with sugar. Bake for 16-20 minutes, or until lightly browned on edges. Cool completely. Cut into bars or use cookie cutters and cut into shapes. Makes about 48 bars.
