Banana Applesauce Nut Bread

Ingredients
3/4 C sugar1 C bananas, mashed1/2 C unsweetened applesauce, Mussleman's 3/4 C canola oil 3 eggs or enough eggs whites to replace 3 eggs (maybe 5 or 6 egg whites)2 tsp. vanilla2 C flour1 tsp. baking soda1/2 tsp. baking powder1/2 tsp. salt1/2 C chopped pecans or nuts of your choice
Directions
Preheat oven to 325 degrees.
Measure dry ingredients (flour, baking soda, salt, baking powder) in a small bowl. Stir with a spoon and set aside.
Next, use mixer and blend sugar with following 5 ingredients in a large mixing bowl. Gradually add dry ingredients to wet ingredients spoonful at a time while continuing to mix until smooth. Stir in nuts.
Prepare a 9" by 5" loaf pan by spraying with PAM or similar product. Fill pan half full with batter.
Bake 65 minutes or until toothpick comes out clean.
Cool for 20 minutes on rack in pan. Loosen sides and remove from pan to serving platter. Cool upside down to desired eating temperature. Turn up right, slice and serve.
Or, cool completely, wrap in foil, put in freezer bag, and freeze for a later time.
Tip: You can use Wilton Meringue Powder to make egg whites. Add the powder to dry ingredients and the water to wet ingredients. See side of Wilton Meringue Powder for amounts that equals 5-6 egg whites. You can find Meringue Powder where the other Wilton products are shelved at the grocery store or Wal-Mart. Usually, it is with the cake decorating supplies.
For Banana Nut Bread, use 1 1/2 C mashed banana and leave out the applesauce.
