20 saltine crackers, finely crushed 3 tbsp 1% milk1 tbsp firmly packed brown sugar1 tbsp honey1/3 cup flour2 1/2 tbsp butter, diced 1/3 cup boiling water1/4 tsp instant espresso powder1/4 tsp baking soda2 1/2 tbsp corn syrup1 1/2 tbsp molasses1/2 tsp vanilla pinch ground cinnamon
Preheat oven to 350F, lightly grease a 6" pie plate.
Combine cracker crumbs, milk, sugar and honey until a damp, sticky mixture forms. Press into pie plate.
Bake 15 minutes.
Cut butter into flour to an even crumbly texture.
In a separate large bowl, stir together boiling water and espresso powder.
Stir in baking soda, corn syrup, molasses, vanilla, and cinnamon, whisk well to combine.
Spread flour crumble mixture onto hot baked crust and immediately pour molasses mixture over crumble – do not stir together.
Bake 40 minutes, until just set (when jiggled, it will still seem a little fluid).
Let chill overnight before serving.
