Mediterranean Frittata

Ingredients
8 oz. Egg substitute1 medium potato, sliced1 medium tomato, sliced2 green onions2 Tbsp parmesan cheese2 Tbsp vegetable or olive oil1 Tbsp dried basil
Directions
Heat 1 Tbsp oil in a 9 inch non-stick skillet over medium heat. Cook onions, tomatoes and basil for 2 min. Remove to a plate. Cook sliced potatoes in 1 Tbsp oil and leave layered in skillet. Mix paremsan wih egg substitute and pour over potatoes. Sprinkle tomatoes and onions on top. Coork at medium hate for 3-4 minutes until eggs are thickened but still moist.
