Southwestern MUFA omelet

Ingredients
10 large olives1 can tomatoes with chilis, drained1 can black beans, drained and rinsed2 lg eggs4 lg egg whites2 oz shredded mozzarella
Directions
slice olives, drain the tomatoes, drain and rinse the beans. Place all three in a skillet sprayed with cooking spray. Heat . Whisk the eggs and pour over vegetables. cover and cook over low heat until cooked through. Turn off heat and allow to sit and set up for 2-3 minutes.
