Introduction

Delicious--spicy chicken low fat chili Delicious--spicy chicken low fat chili
Number of Servings: 6

Ingredients

    1/2 quart pot of water
    1/2 bag dry beans
    1/2 med onion
    2 tablespoons of Olive Oil

    3 breast of chicken
    1 bell pepper
    1/2 onion
    1 zucchini
    1 cup of carrots
    1 potato med
    2 celery stalks
    2 jalapeno peppers
    1 can of cream of chicken soup

    1/2 teaspoon of Italian herbs, season salt, garlic powder, garlic pepper, chives, chili powder









Directions

Bring water to a boil with rinsed white beans add 1/2 chopped onion, 1 tablespoon of Olive oil.
Boil until beans are tender (watch for evaporated water) add more water when needed.

In a skillet:
Sautee: cubed chicken, 1/2 onion, chopped bell pepper, and all herbs and spices

Cube Zucchini, carrots, celery--set aside

When beans are soft and tender--add cooked chicken from skillet, season salt to taste

Add cubed vegetables, and 1 can of cream of chicken

Simmer until vegetables are cooked
