Ingredients
2 c whole wheat flour1/2 c water1 tsp salt
Directions
Mix the flour and salt, then add just enough water to make a nice dough. The dough should be firm, but soft to the touch and not sticky.
Divide it into 8 even-sized balls and roll each one in a little more flour.
Roll out each ball into a nice thin circle or square and put on a hot pan. Cook for about a minute on the first side, and about 30 seconds on the other side. If you have a gas/flat top stove, move the pan off the heat and put the roti directly on the heat source for about 30 seconds. It'll puff up and deflate.

    I make these ALL THE TIME! and I freeze them individually wrapped in plastic bags as soon as they're cool. To defrost them just let 'em sit out for about 20 minutes and they're as good as fresh! YUM! - 4/15/08

    I'd omit the salt. Another variation is to add 1-2 tbsp of soy flour to the mixture to increase the nutritive value of the roti. - 3/17/07
