Oatmeal Muffins

Ingredients
5 Cups of Old Fashioned Oats3 tsp baking powder1 tsp baking soda1 tsp salt2 Tbsp ground cinnamon6 scoops soy protein powder1 Cup walnuts chopped2 Cups non-fat milk4 eggs1-1/2 Cups unsweetened applesauce2 tsp vanilla extract
Directions
In a bowl mix all the dry ingredients
In another bowl mix all the wet ingredients fully
Combine wet and dry ingredients together, mixing well.
Spray muffin pan with Pam and fill. Makes 12 large muffins or 24 med.
Bake for 40-45 minutes in 350 degree oven.
Test center by using a tooth pick- if it comes out clean muffins are done.
