Bacon and tomato pasta

600g pasta1tbsp vegetable oilOne small onion (chopped)2 cloves garlic (finely chopped)4 slices bacon (roughly chopped)a large handfull of mushrooms (roughly chopped)One large eggplant (cubed)One can of chopped tomatos1tsp dried oregano
Boil a pan of water and when its bubbling add the pasta. Let it cook for roughly 12 minuted until just soft.
Meanwhile heat a small amount of vegetable oil in a sauce pan add the onions on a low heat until softened then add the garlic and bacon.
After the bacon add the mushrooms and fry until golden.
Then add the eggplant cubes and mix through. Immeadiately add the can off chopped tomatoes to stop the eggplant soaking up any of the oil. Add the oregano and mix throughily.
Let it bubble away until the pasta is cooked. (roughly 5-10mins).
When cooked, drain pasta. Turn the sauce off and throw the pasta into the saucepan. Mix it all about then serve.
