Lebanese Chicken Patties

Ingredients
1 Tomato, diced2 Tbsp. chopped mint3/4 c. plain fat-free yogurt1/2 tsp. salt1 c. water1/2 c. bulgur1 lb. ground chicken1 large garlic clove, crushed through a press1 tsp. gorund cumin1/8 tsp. black pepper6 c. baby salad greens2 tsp. lemom juice1 tsp. olive oil.
Directions
Makes 4 servings plus left overs
1. Preheat oven to 375. Spray a baking sheet with non-stick spray. Mix the tomato,mint, 1/2 cup of the yogurt, and 1/4 tsp of the salt.Bring the water to a boil in a small suacepan. Stir in the Bulgur; remove from the heat. Cover and let stand until the water is absorbed, 25-30 mins.
2. Transfer the bulgur to a large bowl. Stir in the chicken, garlic, cumin, pepper, and the remaining yogart and salt. Form into 8 patties. Bake on the baking sheet until cooked through, 25 mins. Toss the greens, lemon juice and oil;divide among 4 plates. Top each with 1 patty and 1/4 cup of the yogurt mixture. Chill the remaining patties up to 3 days.
