Broccoli Soup and Stuffing Casserole

4 Packages of Broccoli Wokly or 8 cups chopped Broccoli - fresh1 Can Cream of Chicken Soup (the herbed kind makes an even tastier dish).5 Cup of Mayo - to lighten the dish fat free could be used too1 egg - slightly beaten1 small onion grated1 Cup shredded cheddar or colby jack cheese. (or more to taste).5 package or more of Herbed Stuffing mix (2-3 cups dry)1/4 cup butter (optional)
Spray a 9x13 pan with non stick spray.
Mix ingredients from Broccoli to the cheese (reserve a bit of cheese for the top or add more). Add 1/2 of the stuffing to the mixture save at least a cup for the top.
If you use the butter - melt it and mix it into the stuffing prior to adding the stuffing.
Put your casserole into the baking pan, top with remaining ingredients. Cover and bake at 350 degrees for 30 minutes.
