Sweet Potato Kugel

Ingredients
6 Sweet Potatoes, scrubbed and sliced (peeling is optional)8 egg whites4 oz low fat cream cheese, softened3/4 stick butter, melted and divided1 cup nonfat yogurt2 C Splenda, divided2 T vanilla1 C Caramel Delight Fiber One Cereal, crumbled1/2 C pecans
Directions
Preheat oven to 350. Grease large rectangular baking pan. Whisk together, eggs, cream cheese, yogurt, 1/2 stick melted butter, yogurt, 1 C of Splenda, and vanilla. Place half of potato slices in a layer, sprinkle with half of raisins and pour 1/2 of mixture over 1st layer. Repeat.

Mix remaining ingredients and sprinkle over casserole.

Bake at 350 degrees for 1 hour (until bubbling).
