Sweet Potatoes & Pears

Ingredients
5 lbs sweet potatoes2 tbl butter or margarine – room temperature5 large ripe Bartlett pears1 cup Pear Nectar¼ - ½ c brown sugar1 tsp cinnamon¼ tsp ginger¼ tsp salt
Directions
Pre-heat oven to 400 degrees.

Fork sweet potatoes and bake in pan for 1 hour. Cool, peel and slice into ¾” slices.

Pre-heat oven to 350 degrees.

Core, peel and chop pears into ¼” – ½” chunks. (If you are doing this slowly, you may want to place the pear chunks into a bowl of water and a little lemon juice so that they don’t turn brown.)

Spray Pam into a large skillet then melt the butter in it. Add the pears and sauté over a medium heat until they begin to soften.

Pour pear nectar into a bowl and stir in the brown sugar, cinnamon, ginger and salt.

Reduce heat on skillet to medium-low and add the liquid. Cover and simmer until pears are very tender.

Spray Pam into a ceramic casserole dish. Add layers of sweet potato slices and the pear mixture from the skillet.

Cover and bake for 45 minutes.

    I substituted carrots for the sweet potatoes (we had some REALLY HUGE carrots from our garden that were bigger than most sweet potatoes). It turned out great!! My husbands family loves "candied" sweet potatoes. This will definitely be a much healthier substitute. - 10/28/09
