Leftover Turkey Soup

Ingredients
2 small onions diced3 C baby carrots roughly chopped2 C celery diced3 C red, yellow, green bell peppers2 Tbsp unsalted butter1 Tbsp dried garlic1 Tbsp rosemary1 Tbsp thyme1 Tbsp sage2 Tbsp fresh black pepper11 C Turkey broth10 C chopped leftover turkey1/4 C whole wheat flour
Directions
Melt the butter in stock pot, add onions and saute, then add carrots, celery, bell peppers. Cook for a while then add spices and mix. Add 3 cups of turkey broth. Dice up the left over turkey then add to the pot. Now add the remaining 8 cups of turkey broth and let simmer on the stove top. Once the broth and everything is hot remove 1 cup of turkey broth and add flour mix then add back to pot. Cover and place in oven to finish cooking at 275 degrees.

    Sauteed onions in olive oil instead of butter, reduced amount to 1 tablespoon. Left out the flour. A really tasty recipe, great use of leftover turkey...think I'll try it with chicken later. - 12/2/08

    Delicious & nutritious. Great for our cold weather. I substituted Extra Virgin Olive Oil for the sweet unsalted butter and added some zuchinni, golden neck squash, & 1 C. frozen corn kernels. Also omitted the 1/4 flour . . . didn't feel we needed it. Our family loves this soup! - 11/30/08

    It was a success at home! Dad, mom and the bros all had seconds. My changes: olive oil ,only green pepppers, no celery,no carrots and no flour. Most changes based on low carb needs. I might try adding some garlic. Thanks a bunch for sharing. It taste pretty yummy and filling - 12/21/10
