Vegetables - Swiss Vegetable Medley

1 (16 oz) bag Frozen Broccoli/Cauliflower Mix (thawed and drained)1 Can Mushroom Soup1 Cup (4 oz) Shredded Swiss Cheese1/3 Cup Sour Cream1/4 tsp Pepper1 (4 oz) jar Chopped Pimento (drained)1 (2.8 oz) Can French's French Fried Onions
Combine Vegetables, Sup, 1/2 Cup Cheese, Sour Cream, Pepper, Pimento and 1/2 Can Onions. Pour into a 1.5 quart casserole.
Bake COVERED 350 degrees for 30 Minutes.
Top with remaining cheese and onions.
Bake UNCOVERED 5 minutes longer.
Makes approximately 9 - 1 Cup Servings.

I had this for the 1st time this Thanksgiving and decided to make my own with a sparkpeople version. Turned out very tasty and a delicious alternative to veggies. - 11/30/11

This is a family favorite. We consider it a veggie - smile. Not the most calorie prudent of all recipes, but as a special occasion dish I think it does just fine. It would be interesting to know how you changed it.
