6 Carrots, sliced length-wise OR1 Small bag of Baby Carrots1T Horseradish2T Onion, grated (approx 1/2 medium)1/2 C Mayonnaise (light or fat free)1/4 C Water1t Salt1/4t Pepper1/4 C Bread crumbs--these are optional, more decorative than worth the calories...!
Cook/steam carrots until tender.
Place in baking dish (single layer of carrots is best, but no higher than 2 layers)
Mix remaining ingredients,
Pour over carrots, coating well.
Sprinkle bread crumbs on top--if using--remember to add the calories (107 calories).
Bake 375 degrees for 15 minutes.
