Sweet Potato Souffle

5 sweet potatoes, mediumApple juice - about 1/2 cupground nutmeg - to tasteground cinammon - to tast
Cook the sweet potatoes till soft. (microwave works great, just remember to pierce them first)
Scoop out the inside of the sweet potatoes into a food processor.
Add apple juice, nutmeg and cinammon and puree.
You can continue to add nutmeg and cinammon (and juice) until consistency and taste is good.
Can be served hot or cold.
