Sweet Potato-Chickpea Stew

Ingredients
1/4 cup cilantro leaves or 1 Tbsp dried1 tsp olive oil1 cup diced onion 1.5 tsp minced garlic1/2 tsp cinnamon2 tsp cumin2.5 lbs. sweet potatoes peeled and cut into 1" chunks2 cans (15 oz) chick peas, drained and rinsed1 cup vegetable broth1/4 cup creamy peanut butter1 large (28 oz) or 2 small cans diced tomatoes
Directions
Saute onions and garlic in olive oil in a large pan with a tight-fitting lid. Add remaining ingredients and simmer about an hour.
