Light Poppyseed Chicken

Ingredients
1 lb. cooked chicken breast, shredded with fork1 1/4 c light sour cream1 can 98% fat free cream of chicken soup1 T poppyseeds1 sleeve reduced fat Ritz crackers3 T butter
Directions
Boil and shred chicken. Mix sour cream, soup and poppyseeds. Add chicken. Place in a casserole dish. Crush crackers and add softened/melted butter and combine. Add cracker mixture to top. Bake at 350 for 30 minutes. Let sit for 5 minutes. Enjoy!

    Wanted to make favorite poppyseed chicken recipe tonight but glad to find lighter version. I've been making equivalent modifications for years but wasn't sure how effective they were in reducing calorie and fat content. - 10/24/09
