1 cup diced cooked chicken2/3 cup diced onion1 1/2 tsp minced garlic1 Tbsp sesame oil1 1/2 tsp curry powder1/2 tsp salt1/2 tsp black pepper1/2 tsp crushed red pepper flakes3 cups chicken broth1/4 cup tomato paste1 cup chopped stewed tomatoes, drained3 Tbsp chunky peanut butter
Makes 6 1-cup servings.
In a large pot, saute the chicken, onion, and garlic in the sesame oil until onion is translucent, about 10 minutes. Add the curry powder, salt, pepper, and red pepper flakes and saute for 1 more minute. Add the chicken broth, tomato paste, stewed tomatoes and peanut butter, stirring until well combined. Heat until very hot but not boiling. Serve immediately.
