16 oz lean ground beef2 cloves garlic1 cup onion1 summer squash, sliced1 zucchini, sliced1 can corn, drained1 can cut green beans1 can tomato sauce1 can stewed tomatoes1 T chili powdertwo cups white rice16 oz sharp cheddar cheese
Brown ground beef, onion, and garlic in a very large pot. Drain. Add all remaining ingredients except for rice and cheese. Cook over medium heat for 30 minutes, stirring regularly. Add rice and cheese. Cook for 10 minutes. Serve.
Makes approx 8 servings and is great as leftovers.
