Quinoa - 2 Cups already Cooked Onions, raw, 1 medium diced Peas 0.5 cup Yellow Sweet Corn 0.5 cup Extra Light Olive Oil, 1 tbsp Mushrooms, fresh, 6 medium chopped Soy Sauce, 2 tbsp Egg, fresh, 1 large + 2 egg whites Chicken, pre cooked (leftovers work great) chopped to bite sized pieces
Saute onion in olive oil, add peas, corn and mushrooms and cook until all are tender. Add chicken that is already cooked, Measure two cups of cooked quinoa and add to the pan, mix with veggies and heat through. Add soy sauce (use low sodium if you have it, and add it to your preferred taste) mix altogether. Mix the egg and egg whites, pour over quinoa and vegetable mixture and mix and cook until egg is ready. Enjoy.
Add different spices to change it up if you desire.
