Elegant Winter Salad

Ingredients
1 bulb raw fennel, sliced on mandoline4 stalks celery, sliced on mandolinePecorino Romano cheese (or Parmesan)fresh lemon juice, extra virgin olive oil, salt and pepper to taste
Directions
Combine fennel, celery. Add lemon juice and olive oil to coat. Add salt and pepper to taste. Top with curls of hard cheese using a sharp vegetable peeler. Garnish with fennel fronds.
