easy enchiladas

Ingredients
1 pint light sour cream1 bunch chopped green onions1 small can sliced black olives2 cups grated cheddar cheese1 can enchilada sauce2 TBS cumin 1 TBS salt20 corn tortillas
Directions
preheat oven to 375

serving size: 2 enchiladas

mix the chopped green onions, black olives, all but a 1/4 cup of the grated cheese, salt and cumin into the sour cream to make enchilada filling. steam the corn tortillas in the microwave until soft. spoon about 2 TBS of the filling into each of the soft tortillas. roll up tortilla and make 2 rows in a large baking pan. cover with the enchilada sauce and top with the reserved cheese. bake for 30-40 minutes or until brown and bubbly.
