Lynette's crustless quiche

1 1/4 cup egg substitute (such as Egg Creations or Egg Beaters, or use real eggs)1 - 2 green onions, diced, or herbs of your choice1 cup lean diced ham1 cup part-skim cheddar cheese, shredded1 cup skim milk1 tbsp dijon or deli mustardsalt & pepper to taste
1. Preheat oven to 400F
2. Spray 9" pie plate with nonstick spray
3. Mix all ingredients in large bowl.
4. Pour into pie plate
5. Bake 40 - 45 minutes or until filling is set and edges are golden
6. let stand 10 minutes before cutting
7. Cut into quarters and enjoy!
8. Refrigerate leftovers for quick and easy breakfast. Just reheat in microwave 60 - 90 sec.
