Waxy Potato Pancake

Ingredients
# Egg, fresh, 1 small# *Potato, raw, 1 small# *Whole Wheat Flour, 1 tbsp# Salt, 1 tsp# Pepper, black, 1 tsp# Parsley, 1 tbsp
Directions
Peel the potato and grate it coarsely in bowl of cold water.

Put the egg in another dry bowl, add salt, pepper, coriander/parsley and the wheat flour. Drain the grated potato, squeeze well to remove the water. Put this with the egg mixture and whisk well. Grease a non stick pan with Pam or 1-2 tsp of oil. Pour the mixture and cook on medium-low heat. Brown both the sides evenly till cooked well. Serve hot with cheese spread or tomato ketchup.
