6 1/4 cups H20 (I use veggie stock)4-5 diced potatoes (around 6 cups)1 thin-sliced onion1 Tbl olive oilOptional protein (Original recipe calls for a diced slice of pancetta, I had a few oz. of Gimme Lean 'Sausage' on hand, so I crumbled that in and it worked fine)1/4-1/2 cu rolled oats (I added more than 1/4 cup; more oats result in a thicker soup)Salt
Combine potatoes, onion, protein, olive oil, and water/stock in 1 large or 2 medium pots.
Bring to a boil, cook 15 minutes until potatoes are tender.
Salt to taste
Stir in oats, cook 10 minutes.
Yields about 12 cups of delicious soup
