Peanut Butter Chicken Vegetable Soup

4 Cups chicken broth1/2 pound cooked chicken breast1 1/2 cups diced potatoes1 cup sliced carrots1 cup sliced zucchini1 cup chopped broccoli2 plum or roma tomatos, chopped2 stalks celery, chopped1 medium onion, chopped1/2 green pepper, chopped1 jalepeno pepper, chopped orcouple dashed cayenne (optional but best)2 cloves garlic, minced1/4 cup peanut buttersalt and pepper to taste
In a large pot, combine broth, potatoes, carrots, onion, celery and garlic. Bring to a boil and simmer 5 minutes, or until vegetables are nearly tender. Add chicken, peppers, tomatos, zucchini and broccoli and simmer 2 minutes more or until vegetables are done to your liking. Add peanut butter and seasonings and bring just to a boil. Adjust seasoning and enjoy.
