Sue's fanous Mini-Cheese Balls

3/4 c. shredded low-fat chedder cheese3/4 c. low-fat (2%) cottage cheese1 Tbsp Horseradish Mustard1/8 tsp. cayenne pepper1 (8oz) package fat-free cream cheese, cut up, soften1/4 c. sun-dried tomatoes (not packed in oil), chopped1 (0.9 oz) package dry vegetable soup/recipe mix1/2 c. chopped fresh flat-leaf parsley
Serves 8
1. Puree the chedder cheese, cottage cheese. mustard, and cayenne in a food processor. Add the cream cheese, tomatoes, and soup mix; process until blended. Transfer the cheese mixture to a medium bowl. Cover and refridgerate overnight.
2. Sprinkle half of the parsley on a sheet of plastic wrap. Drop the cheese mixture by 1/4 cupfuls on the parsley making a total of 8 mounds. Sprinkle with remaining parsley. gently roll each mound into a ball, pressing the parsley so that it adheres. If making ahead , cover and refrigerate overnight. Serve with your favorite low calorie crackers, bagal chips, or slices of French Bread and enjoy.
