Lori's Cranberry Rice Salad

Ingredients
1 1/2 c water2/3 c uncooked brown rice1/3 c chopped pecans1-8 ox can sliced water chestnuts, drained and coarsely chopped1/2 c chopped green onions1/2 c dried cranberries3 T sugar3 T cider vinegar3 T low sodium soy sauce1 t grated. peeled fresh ginger1 t grated orange rind1/4 t crushed red pepper.
Directions
1. Cook the rice in the water 30 minutes or until the water is absorbed. Spread the rice on a baking sheet in a thin layer to cool

2. Meanwhile, toast pecans over medium heat for 3 minutes or till lightly browned.

3. Combine everything in a large bowl and stir gently.
