4 Cups Fresh Spinach Leaves1 Cup Cucumber, peeled and chopped1 Cup Carrots, shredded1 Cup Celery, diced1 Cup Red Apple, chopped1 Cup Unsalted Walnuts, choppedAny Non Dairy Dressing of your choice
Mix Ingrediants in large mixing bowl.
Use about 1/4 Cup of your dressing and mix that in or pour it on top. It is basically an apple waldorf salad, but with the Spinach added. The only thing this recipe lacks is Vitamin B-12.
