Turkey Spinach Lasagna

Ingredients
1 700 ml jar of spaghetti sauce1/2 cup mixed diced vegetables14 oz. canned diced tomatoes1 tbsp olive oil1 tsp minced garlic1/4 tsp thyme1/4 tsp oregano382 grams lean ground turkey2 cups fat free cottage cheese10 oz frozen spinach9 oven ready lasagna noodles4.5 oz part skim mozza cheese, grated1/4 cup reduced fat parmesan cheese
Directions
Heat sauce and diced veggies in a saucepan on low.

Meanwhile heat olive oil, add minced garlic, saute for one minute. Add ground turkey, thyme and oregano. Cook until no longer pink and drain.
Add to the sauce.

Mix together in a bowl, thawed spinach and cottage cheese.

Layers:
thin layer of sauce
3 noodles
sauce
1/4 of the mozza cheese
3 noodles
all of spinach cottage cheese mixture
3 noodles
rest of sauce
rest of mozza cheese
parmesan

Bake at 350 degrees for 45-50 minutes. Let stand for 20 minutes.
