Alton Brown Refrigerator Pie - Mushroom and Onion

Ingredients
1 cup of Half-and-half2 large eggsFrozen pie crust1/2 cup sliced mushrooms1/2 cup diced onions1 T olive oil1-5 cloves of garlic, mincedTwo pinches salt, kosher1/2 tsp. nutmeg, ground.
Directions
Heat oven to 350 F.

Saute mushrooms and onions in olive oil until onions are glassy and mushrooms are soft - when almost cooked, add garlic and saute a little longer.

Put the sauteed veggies in the pie crust

Whisk together eggs, half-and-half, nutmeg, and salt. Pour over the veggies.

Bake at 350 F for 40 minutes.
