Mashed Butternut Squash with Walnuts

Ingredients
1 squash, peeled and cubed1 tbs. cinnamon1 tbs. nutmeg1/2 c. chopped walnuts2 tbs. Land O Lakes light canola oil butter1/4 c. brown sugar
Directions
Microwave squash 8-10 minutes. Cut in half, remove seeds, peel, and then cube.

Heat a pan at medium, add butter, brown sugar, Cinnamon and nutmeg. Add Squash cubes, Saute until squash is tender. Mash or place in food processor with about 1/2 c. water. Puree until smooth. Pour into corning dish, sprinkle with walnuts. Bake at 350 degrees for about 30 minutes.
