1 1/8 cups all-purpose flour3/4 teaspoon baking powder3/4 teaspoon salt1 cup light brown sugar, packed1 cup unsweetened cocoa powder2/3 cup applesauce1 Tbsp olive oil1 teaspoon vanilla extract3/4 cup evaporated milk
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
In a large bowl, combine the flour, baking powder, salt, sugar and cocoa. In a smaller bowl, stir together the applesauce, oil, vanilla, and evaporated milk until well blended. Mix wet and dry ingredients well. Spread the mixture evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
