Almost Guiltless Carrot Bars

Ingredients
1 cup flour1/4 c. brown sugar1/4 cup granulated sugar4 TBS country crock light melted or any light margarine1 cup carrots grated.1 tsp baking powder1 tsp salt1 whole egg1 egg white1 tsp cinnamon
Directions
Preheat oven to 400

In a med mixing bowl combine flour, sugar, salt, baking powder, cinnamon mix with wire wisk.

In a seperate bowl melt margarine then add egg and egg white and beat together.. (you can also just use 3 egg whites or egg subsitute)

Add wet to Dry and stir just til combined. Dump in carrots and mix til combined put in an 8 by 8 inch pan and spread out. Cook For 20 -25 minutes or until golden brown and toothpick comes out clean.

This recipie took me some adjusting to get it right.. I am sure humidity plays a big part in it. If your batter seems to dry add a little fat free milk.

I hope you enjoy. Its not as sweet as carrot cake but it sure makes a great healthy dessert.

    I made this tonight - was delicious! The only thing I added was 1/2 cup of my own homemade applesauce. I used all eggwhites (which you put that you could do). I took this to our poker night - it was completely eaten up! Thanks for the recipe! - 10/20/14
