Frittata with Roasted Red Peppers, Spinach and Caramelized Onions

3 egg whites2 whole eggs1/2 cup buttermilk1 tsp olive oil1 clove garlic1 large roasted red bell, peeled and sliced into strips2 cups raw spinach (not packed)1 Tbsp Parmesan cheeseTony Chachere's to taste
Preheat oven to 350F.
Mix eggs and milk in a large bowl and add the caramelized onions. Stir to distribute the onions.
In a 10 inch non-stick skillet, heat the oil and saute the garlic. Add pepper strips and spinach, cover till spinach is mostly wilted. Pour egg mixture over, reduce heat to medium-low. Cook on stovetop for 2-3 minutes, then sprinkle parmesan over top and put in oven for 10-15 minutes or till eggs are set but not hard. Cool for 5 minutes before serving.
