Turkey Sausage Stew with Vegetables

2 Tbsp olive oil1 med onion, chopped2 summer squash, medium, chopped1 pepper, medium, chopped14 oz turkey smoked sausage, sliced2 cups low-sodium vegetable broth1 can tomato pasteGround cumin, to tasteChili powder, to tasteBlack pepper, to tasteSalt, to taste
1. Heat olive oil in large saucepan or dutch oven. Add onion & saute until soft.
2. Add squash, then sausage, and then pepper. Cook until sausage is brown.
3. Combine broth & tomato paste in a separate bowl. Pour over sausage and veggie mixture.
4. Add quinoa & bring to boil.
5. Reduce heat, cover and cook for 20 minutes or until quinoa is cooked (it should be soft with most of the liquid absorbed).
Makes 6 servings.
