Butternut Squash, Apples & Walnuts

Ingredients
1 small butternut squash, cubed (aprox 3 cups)4 apples, cored and chopped½ c walnuts¼ cup raisins¼ cup craisins (cranberry raisins)3 T real maple syrup
Directions
Peal, clean and cube the squash. Place in a microwave safe dish, cover with plastic wrap and microwave on High 8-10 minutes until the squash is tender but not mushy or bake in 350 degree oven 30-45 minutes until tender but not mushy. Core and cube the apples. In a large bowl, combine the apples with raisins, craisins, walnuts and maple syrup. When the squash is done, simply toss together and serve. Makes 8 large side portions.
